Healing Chicken Stock

Farmer Owl’s Cure-All

I won’t bore you with the long drawn out blog post about how good this Healing Chicken Stock is or how easy it is to make.  I won’t even go into detail about how mouthwateringly comforting it is during the frigid winter or how many different soups one can make with it.  Writing about how the cider vinegar gives it a super health punch and why it’s so good for you when you’re feeling under the weather, will take up too much of your time.  So without further adieu…

1 Whole Chicken

2 Sweet Onions – halved, skins on

2 Granny Smith Apples – halved

4 Carrots – broken in two

4 Celery Ribs – broken in two

1 Lemon – halved

4 Large Bay Leaves

2 TB Apple cider Vinegar

Salt and Pepper to taste (After broth has reduced.  Otherwise it will end up too salty)

Put everything in a large stock pot and cover with water completely.  Bring to soft boil then reduce and simmer on low/med for 4 – 6 hours.  When broth has reached it’s desired taste, gently take out the chicken and other ingredients.  When chicken cools, debone and save meat for soup or another meal.
